White pepper is the one home cooks turn to when they want peppery heat without dark flecks in a pale sauce. It suits creamy dishes, mash, béchamel and light soups where black specks would show. This is dried, ground pepper with a milder, more subtle heat than black pepper and a slightly fermented, earthy note. Stir it into white sauces, cauliflower cheese or a classic bread sauce. It works well in Chinese-style soups and stir-fries, seasoning chicken or fish dishes, and lifting mashed potato or scrambled eggs. Use it sparingly at first, tasting as you go, since the flavour can build quickly once heated through. Add it towards the end of cooking to keep the aroma fresh, or stir into dressings and marinades before serving. Keep the pack sealed tightly and store in a cool, dark cupboard away from direct heat or sunlight. Ground pepper loses its punch over time, so use within a reasonable period for the best flavour. A small spoon in a jar by the hob makes it easy to reach for whenever a recipe calls for a gentler pepper note than the black variety gives.
